"Hi, my name is Melissa Maggiore with Alessi Bakeries. I'm going to be showing you how to actually cut out a cake to actually insert a middle column support for a cake that is not level. You're basically going to take a cake pan that is the same dimension as the bottom of your next tier, you're going to put a small little imprint on the very top. You're then going to take your paring knife, in that imprint you're going to just guide it around following the circle. You only want to cut in about an inch to your next tier, follow it all the way around. Then you're actually going to take your long cake knife, insert it from one side, and just gently lift up, cutting the inner circle of the cake. Just like that, take that out. And then you're then going to take this small little spatula that has a small crook, you're going to take that and the just gently scoop it out on both sides, make sure it's totally released. Then you're just going to take your hand, preferably with a glove, remove that center portion, take that, disregard that or save it for later. And again, my name is Melissa Maggiore with Alessi Bakeries in Tampa, Florida, and I just showed you how to remove the center portion of a cake for a cake support."
