"Ok. Now, we're going to continue to work on our peach chutney. We're going to take our onion and cut that in half. And, cut it in half again. The reason why we do that, is then we can take the skin off in one movement. We have to go and dice these about the same size as we have with our ginger and scallions. Alright. Now, we'll take all of these and scoop them here into our bowl. We're going to take our peaches and just cut them into little chunks. Put these over the top. We're going to measure in a tablespoon of sherry. And, I have some black currant nectar. And, I do also a tablespoon. I'm going to stir this all up together. It's a nice color, making sure all of the white of the onions turn our purplish-pink. And, then we're going to put this into the refrigerator and chill it."
