General Tso's Chicken: Toast & Boil Rice

So now our vegetable stock is starting to heat up and we are going to make our rice and we are then going to turn our back burner up to about 7 and we are going to add our tablespoon of oil. Now we are not going to add anything besides the vegetable stock to this rice right now because it is going to get a seasoning liquid and shitakes after we cook it. So we are going to go ahead and just make it regular, put it out on a baking tray, let it cool and then we are going to sautee our items in here and bring the rice in and heat it back up that way so we can see there are still a couple of globs of our vegetable stock. So we are going to smash those and then we are going to take our rice, a half a cup and dump it all on the bottom so that it toasts just a little bit and so we want to have a 2 to 1 liquid to rice ratio so we are going to measure out 1 cup of our vegetable stock and pour that in here and bring that to a boil, we are going to cover it, reduce the heat to about 4 and cook it for about 15 minutes until all the liquid from the rice has been absorbed.
