"There's several different ways that you can do a beef brisket. Here at Rib City what we do is we chop it. Some people like to pull it, which if you were going to pull it what you would do is just trim the fat off and just pound it and pull the meat out. What we're going to do is slice it. There's also slicing. Which is sliced at a curve. We're going to slice it and then chop it and that's what Hector's going to do now. "So we'll start right here," says Hector. Start at the end. "What we want to do is just kind of cut across the grain, so there's, you can see as we get the fat. A little bit of fat makes the flavor in most of the meat." No we just keep a little layer of fat on the top for flavor. And then after we . . . "You have a whole bunch, you want to kind of chop it up in a very good sauce." That's it. That's easy, very easy to do."
