"Most of the clay that you buy in the store is going to come in a larger chunk usually like five to ten pounds. When you get that the best way to cut it to use some wire and strip it through the block to give you the desired shape and size of your clay. One thing we want to do is continually, if this clay is out of the plastic bag that we have been storing it in that has no air and a little bit of moisture inside. We want to make sure that we are always working it because it, sense it is air drying clay it's just going to continue to dry. When we work it we want to make sure that we are working all parts of it. If it's too much to handle we can alway break it in half. Store one in the bag in the plastic bag with a little bit of watter and just continue to work this. For some of the littler hands it's better to work with a smaller amount at a time and when we are adding water we want to dip our fingers into the water. Never the clay into the water and apply a little bit of water on and work it in."
