"What does a spring onion and a yellow onion have in common? They are all the same. They are scallions. They come from the scallion family. Hi I'm Jawara, a chef for 20 years and today I'm going to show you how to cut scallions. You have to remove this here and remove this and remove this. Now we take them over here and clean them. Let's turn a little water on here and I'm going to take our towel and get a little of this washed out we don't want too much of it in there. When you cut these scallions up you can put them in primary things such as salted ham put them in vegetables, quiches, little things like that, chili, now they are clean. We go back over here and you have to remember there is a little silver skin on here. Some people keep it on and some cut it off. You just peel them and pull the little skin off right here, pull that off and everything and then we just get everything and cut the little tips off. They have these little sprout looking things here and you just cut all that away, cut that away and you just cut. You can cut as much of this as you like the greens and the whites, that is up to you, however you want to do that there and there is your scallions. There is another way you can cut these here if you want to put them into salads and stuff you can cut them on the base and you can make them a little bigger and the scallion is a little milder onion than the regular onion and it is a little better to use these than using chives. Take this here. Now I have showed you how to wash them, cut them, two different ways, suggested things you can put them in. I'm Jawara the chef and now you know how to cut scallions."
