"I'll bet you've always wondered what pine nuts are. Do you know they actually come from pine cones? And there are different varieties of them. And they have to be heated to facilitate the removal from the pine cone. This process adds to the expense. That's why they're kind of expensive on the market. Pine nuts grow in China, Italy, Mexico, North Africa and the South Western United States. They can be found in bulk, and not, in nut shops and health food stores, and they're packaged for many supermarkets. Because of their high fat content, pine nuts turn rancid real quickly, so you're going to want to store them air tight, in either the refrigerator for up to three months, or frozen, you can last for nine months. They can also be used in a variety of sweet and savory dishes. Now I like pine nuts roasted, and I throw 'em on my salads, and they give that extra fiber, but they are high in fat, so use them sparingly. I'm Jan Boydstun from Kitchen Kitchen."
