"After you have formed a pancake less than a half inch thick what you can do is with the flat edge of the wooden rib, start from the center applying a slight downward pressure, removing some of the throwing ridges then cleaning off the edge of the rib and repeating the process again and again what we are doing is a slight downward steady pressure from the middle to the outer edge and cleaning off the edge of the rib and repeating this step again. The rib should not dig in to any area of the plate unevenly and when you get to the edge just take the rib away slowly."
