"Hi my name is Gary Westby. And I would like to tell you about the LeClere Briant Les Cheves Pierreuses champagne. This is one of my favorite champagnes to talk about, because it comes from a single vineyard. One small plot in the village of Kunier. Which is the very, very first village to harvest eastern champagnes. As it s the warmest micro climate in the region. This is a roughly even blend of about a third, a third, and a third. Chardonnay, Pinot Noir and Monet. And it’s made instead of with steel tanks or wood barrels, actually in tile. Which is very, very unusual! It’s also unlike almost any other champagne you'll find co-fermented. So they pick the vineyard together when all of the grapes are ripe. They press it together and ferment it together. Almost all other champagnes that you'll taste have the varieties picked at different times. Pressed differently. Fermented differently and then blended together. Another thing that makes this unique is that Mr. Pasqual LeClere the owner of LeClere Briant farms this plot, completely biodynamical. A very, very strict form of organic for the culture."
