"Hi my name is Gary Westby from K&L wine merchants. And I'd like to tell you about the De Meric champagne. This particular bottle is composed of 80% Pinot Noir, 15% chardonnay, and 5% Monet. All from the eastern part of the valley of the Marne. In the villages of the Yiee and Marielle primarily. This is made in a very novel way. Half of the wine is fermented in old oak barrels, with no malolactic fermentation. Half of the wine is fermented in stainless steel with full malolactic fermentation. This allows them to take the harder and more acidic lots and allow them to be softened by the mallow. While keeping the freshness of the ripest and most intriguing lots. And bringing a little bit of extra air and a sort of immunization against future oxidation, by having the meat in the barrels. This wine is one of our most robust and powerful champagnes. And a big favorite of mine with smoked salmon."
