"So today we're talking about tea. And now I'm going to demonstrate how to make tea in a Goung Fu fashion using a Yi Xing teapot. So, first off, we'll start by heating the tea pot. So I just poured hot water into the empty tea pot, and let it sit for a minute. And then by letting it sit it will warm the whole pot. And one way you can test to see if your pot is warmed sufficiently, is by touching the tip of the pot here. And if you wait a minute then the top of the pot will actually become hot and that's when you know the pot's really ready to brew. So, now we've warmed the pot and I will decant into my pouring vessel. And now I'm going to put the tea leaves into the pot. So I'll use a tea scoop. And you want to fill the pot so it's about a third full of tea leaf, a third of the way full. But this is some aged tea that we're making today, so I'm going to use a little bit less. Because with aged tea you typically use a little bit less tea. And now I will add the water for the first infusion. And with aged tea I do not rinse the tea leaf. So I drink the first infusion. And that will brew for thirty seconds. OK, now the tea has brewed long enough, so I will decant the first infusion. And this golden brown color is a good color for aged oolong. And next I'm going to demonstrate how to serve the tea."
