"So you are making some teas and you've got a cup of ice tea and you are tasting it and it's like there's some bitter after taste. How do I get rid of it? First is to start with a tea that isn't bitter. Like the rooibos or the white tea or even some herbal fruity teas. But if you are going to go and use a black tea the best way is to use it to brew the black tea without using boiling water. That is the best way to make a black iced tea without making it bitter. Another test to prevent the bitterness is to make sure you control the water temperature. That is a huge difference in a bitter cup of tea and a sweet cup of tea. If you take a jasmine green tea that is a popular Chinese green tea and you brew it at one ninety and you accidentally use one ninety instead of going to one seventy five you will automatically get a bitter cup of tea. You will not be able to get rid of it simply by adding more water by diluting it or even adding sugar. None of those factors will be able to mask the bitterness that comes out of the tea leaf. So I always recommend A) starting with a tea that doesn't get bitter like rooibos or very fruity teas or B) reducing the water temperature to make sure you don't get bitter teas."
