Altering Tea Caffeine

There are many ways to alter caffeine in tea. You can take most of it away or you just want to reduce it a bit. To take away most of the caffeine in tea, you recommend brewing your first brew for thirty seconds to a minute, throwing away that first brew and making your second brew the same way. So the way to do that is to put your tea leaves in, you put your hot water, time it. Thirty seconds to a minute, don't let it leave longer cause then at that time you're taking out more of the nutrients instead of just the caffeine. Then you take out the filter or if you making a, using a tea ball, you simply take the tea ball out of your cup and let it sit throughout the first brew that was thirty seconds or so and you put back the tea ball and you let it sit for three to five minutes, then you get a cup of tea that's almost caffeine free. Now, how do you reduce the caffeine? What you do is you pick leaves. You like green tea, green tea has moderate amount of caffeine about 40 mg. or so, and to do that is you pick a tea leaves that is picked later on the year or you pick a green tea that's growing on a lower elevation. Also green tea leaves that are made with broader leaves. Tea leaves that are bigger contain less caffeine and tea leaves from the lower part of the tea plant also has less caffeine. And tea leaves picked at the last part of the year, sometime in August, in the fall, they also has less caffeine and tea leaves picked in the beginning of the season. New shoots always carry more caffeine. Another way to alter caffeine is to brew your tea at a lower temperature. You're brewing a black tea or boiling, it'll take out the caffeine. By brew a black tea at a 185, you're not going to taste the full boldness of a cup of Assam black tea, but you'll be able to taste a good cup of black tea without so much caffeine that Assam black tea might have.
