"Today we're going to make a pork dish. We're going to take pork and we're going to salt and pepper it and then we're going to put it in a marinade. We're going to make a marinade out of orange juice, lemon juice, lime juice, a bay leaf, cilantro, garlic and hot sauce. We're going to let that go for about an hour and then we're going to bring it back and saute it. After we're done, sauteing it, we're going to be making a black bean and baby banana sauce. I'm using baby bananas but if you'd like to use plantains, you could do that, as well. We're going to cut a Pasilla pepper and half of a red pepper and we're going to cook that, with our beans. Then we're going to roast our banana's and we're going to add some cilantro to that, as well as, some salt and pepper. Then, when that's all done, we're going to take the bananas out and add it to our sauce and then that'll go over the top of our pork. We're going to put, our pork, up against chorizo rice. So we're going to be taking the pasilla pepper again, with chorizo, a mild sausage, and we'll make a rice, with that."
