"Now, that the oil is heated and our chop is ready we can throw this whole thing in. But, I'm going to go and follow this line right here and cut off the bone and the fat. So, we just have one nice small piece. I'm going to leave a little bit of this fat on the back for some added flavor. So, we're going to let this cook. But, we're not actually going to cook it for that long. Because, we're going to remove it. We're really just going to mark it. And, then once we've got both sides with a nice white color we're going to take it out and sauté our onions and apples. So, you don't have to worry that this dish is raw. Because, we are actually going to be finishing it in the sauce. Once this is marked, we'll remove it. And, then we will add our onions. I'm going to add about half of these apples right now. And, then we will re-add our pork."
