"As our veggie stock is cooking, we're going to go ahead and take our baking sheet and we're going to take three, or sorry four pieces of bacon and lay them out on the sheet. And then we'll put them in the oven and let them bake up. We're going to cook this bacon twice, first like this then we'll take it out and cut it up and after we dice it up we'll put it on top of our au gratin. So, we're going to get our casserole dish ready. We're going to take a little bit of our butter and we're going to grease the bottom of our casserole pan. I'm gonna put that aside. I'm going to take our sweet potato and cut off the ends. And then we can either use a peeler or you can take your knife and just cut along the edges and remove all of the skin."
