"Our garlic now is just starting to get a little dark so we are going to go ahead and just scoop that out because we do want a flavor of garlic in the oil but we don't want a burnt flavor in the oil. We will bring this back and we will put our gloves on to get ready for our pork and I am just going to go ahead and remove that big fatty piece and then we're going to cover both sides with salt and pepper and rosemary and we are going to take our flour and spread it out on another plate and then take our chop and coat it in flour and bring this pan over to our saute pan and drop the chop inside."
