"Once our spices are in you are going to want to stir them to be sure that there is no clumps of dry spice anywhere and then we will take our basil and we will pick off the ends and we will cut each leaf on a bias. We'll add that to our sauce and we'll give it a quick stir and then we are going to take our chicken, readd that, now the chicken is about half way done right now, we will stir it to coat and then we're going to go and turn our heat down. We're at 8 right now, we're going to turn it down to about 4 or 4 and 1/2 and then we are just going to let these chickens simmer in the sauce and we will turn them periodically to make sure that they are basted on both sides and cooked all the way through on both sides."
