"Hey what's up? I'm Tony Fatso Siciliano and today we're going to talk about what you need to do to cook outdoors. You know, cooking outdoors, there's so many things you need to think about. Like for example, where do you do it and what do you do it with? Well, first of all if you're going to be cooking in your backyard, let's think about where you're going to be in proximity to your house. Every year there's hundreds of stories of people who put their barbecue grill too close to the house. It doesn't matter whether there's charcoal grill we're talking about or a LP propane grill that we're talking about. They put the grill too close to the house, something happens, there's a fire, something awful happens and before your know it the whole house burns down. So location of your grill is very important. When you go to the store to buy a grill they have something for everybody in every price range. Whether you're looking to spend about a hundred dollars on something like this or you're looking to spend ten thousand dollars on a model, they have something for you. But the secret is, grills are kind of like cars. They all get you where you want to go it's just how much luxury to you want to get there in. A basic model like this does the trick. This is a charcoal grill. You can also choose a natural gas grill, filling stations located in every community, and they're easy to get started, they're easy to clean as opposed to a charcoal grill. You have to decide what grille is right for you. Once you have your grill set up so it's a safe distance away from your house, so that if there's ever a problem it won't burn your joint down, you need to go to the store and buy yourself a barbecue utensil set. Have some tongs in there, have a fork in there, a spatula certainly wouldn't hurt any thing and the most important tool is a thermometer. A thermometer, little barbecue instant read thermometer is something everybody should have. What it does is tells you the internal temperature of your meat, so you can guarantee it's done. Today we're cooking up some Italian sausage on our grill. We're using a charcoal fire and to get our charcoal lit, we use what's called a charcoal chimney. If you don't have a charcoal chimney, no big deal, make your charcoal in to a mound in the middle of your grill and use some charcoal fluid. Once you have your grill, once you have it set up, once you have all your utensils, you have to figure out what method of cooking are you going to cook the meat with. Three main categories, direct cooking, indirect cooking, and smoking. Alright so a quick recap. You need a grill, you need a source of heat, you need your meat, you need your tools, you need a thermometer and you need a fire extinguisher, God forbid something should happen.
