"Hi. I'm Gabi, and I'm going to show you how to make Vegan sushi. It's really easy, and you only need a few ingredients. I've got a sushi rolling mat. It's not necessary, but if you have one, it is nice. So I've got a piece of nori. And you'll notice the shiny side is facing down. And that's what you want to do. I've also got some cooked sushi rice. Here's a little trick: you can also use leftover rice from an Asian takeout place, that's been steamed. Just put a little bit of rice vinegar on it, and it'll be sticky. Then I've also got a little bit of water, because that's going to help me keep my hands moist and keep it from sticking. And then, I also have some shredded carrots that are going to be my filling. You can use absolutely anything that you want. So, first thing I do is get my hands really wet. Again, that's to keep the rice from sticking to me, and sticking instead to the nori. And then I want to push the rice down. And you'll notice that I'm not covering the whole sheet of nori, because it would be too thick. It's really important to remember that less is more when you're making sushi. If you really jam pack it, it's going to be hard to roll and hard to cut, and your pieces won't be very pretty. So, now I've got some shredded carrots, just because they're really easy to work with. I also love to use sweet potato and avocado and cucumber. All kinds of things are delicious, but I'm going to use the carrots today. And then, I just gently roll my sushi up, keeping it very firm and kept together. And then I use a little bit of water to seal. And then what I'm going to do is roll it back and forth. And what this does is it makes sure that the ingredients really come together. So now that I have my roll, it's time to cut it. And so to cut sushi, you need a really sharp knife. And you want to saw back and forth. And the ends are never quite as pretty as the middle piece. But take a look at that. Making sushi is really fun to do for a party, because it's impressive, but people have a lot of fun doing it. Everyone always ends up being surprised by the beautiful sushi they can make. It's a lot of fun to do. So there you go. You just need some sake and maybe some edamame, and you've got yourself a Vegan sushi dinner."
