"I'm Karen Lasher, chef/owner of Around The Table in Camas, Washington. When I was a college student, I needed to make a little extra money, so I got a job in the university food services catering department. I had no intention of being a caterer. I had no intention of being in food service. I wanted to be a lawyer. But I have been in food service ever since, because I just love it. I love the creativity, I love everything about the business. If you feel that you love catering as well, or food, and would like to be a caterer but don't know where to start, want to learn how to become one, I would suggest the first thing is to work for a caterer, or work for a restaurant that does a lot of catering. You'll learn a lot about the business as you work in it hands on. Secondly, you'll really need to develop some recipes. So kind of look around and see what other people do. You can search the Internet for hours and see what kind of recipes other caterers use, what kind of menus they use. There are a lot of catering trade magazines, and they are filled with wonderful pictures and stories about what caterers do. There's also certain schools. Some of the culinary schools or some schools that have a culinary program offer specific programs in catering. But, whatever you....however you do it, if you really think that this is a field for you, go for it. It really is very rewarding, and just go ahead and get started and learn how to become a caterer."
