"I have very fond memories of tea. As a young child growing up we would always have a pot of tea after dinner and we would sit and drink our tea after the end of the meal and it was a great memory, something I still enjoy today. I am Karen Lasher of Around the Table in Camas, Washington and today we are going to talk about white tea. All tea green, oolong, black and white, comes from the same plant the camellia sinensis. It is just the difference of how the plant is processed that creates the different tea. White tea is the uncured and unoxidized tea leaf. It is fast dried whereas green tea is roasted and oolong and black teas are oxidized before they are cured. White tea is considered the traditional drink of emperors and recent studies suggest that white tea contains higher levels of antioxidants and less caffeine than other teas therefore making it a more beneficial tea to drink. You can enjoy white tea both hot and cold. Here we have a purchased Lipton white tea which would be served as a cold beverage but you could also brew hot white tea and let it sit and then add it to ice to make an iced white tea and there is various different teas available. We have here a vanilla tea, a white peach tea, and a regular tea. You can also, and in this case you are also adding your tea to hot water. You can also buy tea in a bulk leaf and in that case you would want to brew it in a tea pot and you would have a strainer that fits in where you put your tea and you brew a large pot of hot tea."
