You want to be able to have the best coffee available out there to be able to serve the best coffee to your customer. And the important thing is also to have a great staff. Baristas are known to make good cappuccinos, good lattes, good espressos. That's what you want. You want a quality control all the way from your roaster that provides you the product to your barista that's serving to your customer. You also want a good atmosphere.
