Hi, my name is Charlotte Skiles, I'm a Nutrition Consultant and Clinical Herbalist with Eat in Peace Wellness Consulting located in Austin, Texas. Today I'm going to talk to you about diets for diabetes. Now I'm not so sure that there are diets for diabetes so much as there is a diet for diabetes and it's basically doing the opposite of what you did to get that disease process started in the first place. So, diabetes involves a very poor metabolism of carbohydrates, that's how you get there and so what you have to do is you have to take the carbohydrates out of the diet to reverse the process. Diabetes is interesting because it's like the body looses it's self corrective mechanism and it just keeps getting deeper and deeper into the diabetic disease process. So you have to have a very strong intervention in order to reverse what's going on here. Once again, that very simply doing the opposite of what you did to get there in the first place. So what foods do you eat in terms of a diet for diabetes? You eat the foods that we evolved on. You eat lots of leafy green vegetables, things that grow in the ground, come out of the ground, roots, leaves, berries from bushes. You would eat animal products from healthy animals, you would eat nuts and seeds and good quality oils, that's the other part of the puzzle here as well, in addition to the carbohydrates as moving towards good quality fats in the diet and away from man-made trans-fats, hydrogenated oils and whatnot. You would eat more olive oil and more butter and more coconut oil and the oils that are stable and facilitate self communication so that insulin can figure out how to do it's job again. So that would be my recommendation for a diet for a diabetic, eat the foods from Mother Nature and emphasize really good quality fats.
