First you get you 4 ounces of fish. The next thing you do is have your fish man to take the skin off and remove the bones. Now you are going to make your marinade. Use some light soy and three quarters cup of rice vinegar. That rice vinegar has a nice smell to it, a tablespoon of honey, a little bourbon, aw that smells nice, any type of bourbon you have got, anything will do. It's no problem, whatever you have got around, a little kosher salt and some pepper. Now you want to whisk this together. Now I take my marinade and pour it over my salmon in a nice baking dish, cover it into the refrigerator it goes. It has been two hours, now I will take the salmon out and it has been sitting in the vinegar and the vinegar kind of cooks it and kind of firms it up a little bit. Now I have my olive oil and butter in a nice hot pan. Now I am going to put my fish into the pan. Cook that four minutes on each side, time to flip my fish. These guys are done and now I am going to put them on with my bed of spinach which has olive oil on it and vinegar. Now I cut the lemon in half and take my little strainer so I won't get any seeds in there. Don't that look pretty, pretty and healthy.
