"Now it is time to start making the broccoli. We have got our water boiling in the back for the potatoes and our broccoli is now tender. We are going the heat down on this a little bit and we are going to drain it. Again these broccoli they don't have to be cooked all the way down because we are going to mash them and then we are going to bake them so they are going to be cooked twice so we will strain the broccoli out and then we will put it right back here in the pan. Now we left the heat on this because we are going to go and put a tablespoon of oil in this sautee pan and we are going to move it around so that it is coating all the bottom and a little bit up on the sides. So we are going to finish mincing our garlic and we are going to add that to the pan and our onions. We are not going to dice our onions any smaller than how we had originally cut them."
