This is a refreshing cocktail. It's called a Dominican Coco Loco. Now with a coco in it you would think it has coconut rum and it does. It's got amaretto, its got some grenadine, a little milk and pineapple juice. Interesting cocktail. Let's get started! We're going to build this, well actually we're going to shake and strain it in to a Collins glass filled with ice. Let's get our shake. Oh, it's right here. Thank you very much. Appreciate that. Okay, we're going to use coconut rum. In this case it's Malibu. Now the nice thing about Malibu, it says Caribbean on the front but it's actually made with coconuts and Jamaican rum and it's a product of Canada. Go figure that one out. Three parts. Doesn't want to work. We'll be here all day. Splash, splash, splash, splash, splash, splash, splash, splash. Looks like three parts; good. One part of amaretto. Like so. Let's get a splash of grenadine for good old sweetness. A little bit of light cream here and we're going to fill some pineapple juice. Ah, that looks good. Let's see how my pouring skills are. Let's get our glass ready. Let's give this a good shake. And one of the reasons I like to mix it first and then strain it in to a glass already with ice is that it won't dilute the drink any further because it's already been chilled and mixed. Look at that. Dominican Coco Loco. Ah, am I good or what? Throw a straw in there and down the hatch. Enjoy!!
