"Hi! This is Rich Buccola here in New York City and today on behalf of Expert Village, I'm going to show you how to make sweet potato casserole. We're going to get our heavy cream hot. We're going to add nice heavy cream hot to this. We want to get a low flame underneath our sauce pot. We don't want our heavy cream to get a film over it. That's why we keep it on a low flame. We're going to be stirring it just to get it hot. We're going to add a full cup of heavy cream and then we're going to add a half. So a cup and a half of heavy cream for this. We're going to get that nice and hot. We're just trying to get this nice and hot. You'll see smoke coming from it when it's hot enough. You don't want to get it to a boil. I got this masher. You can use a blender or whatever you have, and basically while our milk or heavy cream is getting hot. Be careful you don't burn yourself with the masher. Just start to really break up your sweet potatoes. You just want to get them in a position where you're starting to mash them."
