"Hi! This is Richard Buccola here in New York City and today on behalf of Expert Village, I am going to show you how to make sweet potato casserole. All right we are back and you could use a potato peeler and you can cook them first and peel them later. I just like to peel them first. It's very therapeutic to start; just prepping stuff. This is stuff too that you could prep before hand so it is done and then it is a little bit easier when you actually prep them. What you want to do is, I like using a paring knife, I am just taking the outer skin of the top layer of the skin off just by cutting away. Make sure you always cut away and don't be afraid to you know just take your time and don't worry. Don't be afraid that you are going to cut yourself. Just take your time and just go this way like so, you'll get everything nice. What is nice about sweet potatoes is that they have a beautiful orange color. Remember when buying them you don't want them to be mushy or have fungus on them. They should definitely be firm, have no smell to them and it is very easy to pick. Remember too that a lot of times in the supermarket when the guy comes in with the produce, they take the oldest stuff and move it to the front and put the fresher stuff in the back. So when you are getting produce, always look in the back first. You will notice that it is probably a little bit fresher. So with that said, peel up your yams or sweet potatoes like so, nice and easy. When we come back, we are going to quarter these and get them in a nice pot of water. "
