"Hi! This is Rich Buccola here in New York City and today on behalf of Expert Village, you better get your fire extinguishers because we're making chili diablo. Alright, we're back. I'm going to talk about our hot stuff going into our diablo chili today. I'm going to use a couple different hot sauces that I like. You're going to use what you like of course. Experiment. They have a ton of stuff as far as hot sauces out there. You can use different Tabasco’s. Whatever you like. As far as peppers today, I'm going to start here with our basic chili pepper. That's what we're going to use. That's a nice flavor. Heat comes out of these bad boys. I try to buy one that I wouldn't buy just to show you. This one I wouldn't buy. It's damaged at the top. The head was off. You can feel it's a little mushy. It's a little discolored. This is one I might not buy. Going a little bit here to the left, this is a nice one. It's a bigger chili pepper. It's hotter. Here's one I wouldn't buy. It's again, discolored. You'll see the difference. Nice green color, firm, beautiful chili pepper. It's going to have a lot of flavor in that for us. Going to the left again. We're going to add some of these little Serrano peppers that are really good. These are the ones that I'm going to use. They're nice in color, whereas this one is one you might not want. It's really common sense folks. You see the ones that look good. Color, smell good, don't have a slim or mold on them. You see this one's a little bruised. Stay away from the bruised ones. Go for the good ones. Also, going to go with a whole bunch of different varieties of different colored chili peppers as well. That will give it some color. Also, give it some different flavor. Then I found these too that we're going to throw in just for good measure. With that said, go out, get some really good peppers because that's what it's all about when it's diablo. Get your fire extinguishers ready. We're making chili diablo here on Expert Village."
