"Hi, my name is Karl James owner of Creolesoul Catering located in Round Rock, TX. On behalf of Expert Village, I'm here to show you my gumbo supreme. Now we are going to take our shrimp here; we are using two different kinds we have some deveined raw shrimp and actually we have some cooked shrimp also. I'm going to season those a little bit with our seasoning mixture and we are not going to be using these for a while so we'll get them nice and seasoned. Something I'm going to do is I like to add just a little filé to them as they sit, filé will actually help thicken your gumbo. But a lot of people just put it in towards the end but I think if you season your shrimp which goes in the very end. It kind of adds a little something so get all that mixed up and season covering all the shrimp and we'll toss this back into the refrigerator and just let it sit, until we are ready for it. So when the shrimp goes in they won't be just plain, they will be already seasoned and have a nice little flavor of their own. So it looks pretty good, it has a great smell and we'll put this back into the refrigerator and let it sit until we are ready for it. I'll see you back at the next step."
