Series Summary

Fried food may not top health food charts for nutritional value, but it sure does taste great. French fries seem like they should be good for you, right? Even after frying, they are still a vegetable, right? Well, sort of, but all of that grease which gets soaked up counteracts much of the potential health benefits. But what if you could create a special casing which protects the vegetables you are frying by keeping them separate from the cooking oil. Sort of like a vegetable submarine in an ocean of grease. Once the sub surfaces, the veggies emerge healthy and unharmed into your mouth. Well, that is basically what an egg roll is: a protective housing for all of the delicious ingredients within, keeping them just as healthy as if you were eating them on a salad. Yes, that's right. Egg rolls are just as healthy as salads, perhaps even more so since they taste so good. So eat as many as you want, because even when shrimp and pork are guests in the submarine, they take on the nutritional value of the other grease submarine passengers.

In this free series of Asian cuisine videos, our professional caterer shows you how to make delicious Thai eggrolls. She begins with the ingredients, then takes you through each step of the preparation, from preparing the eggs, to chopping the vegetable, to making the slurry for this tasty recipe. You will also learn how to roll the eggs rolls, then seal them so the shallots, cilanto, corn and hot peppers stay safe and healthy inside until you are ready to eat them.

"Hi, I'm Leah Schaefer on behalf of Expert Village. Today we're going to learn how to make tye egg rolls. A lot of people are intimidated by Asian cooking. They think it's hard to tackle but once you pick up a few key items, it's really easy to catch on. I found that there's a couple of items in Asian cooking that are really popular when entertaining or have a party. One of them is tye egg rolls so I'm just going to take you through some of the ingredients that we use to make the egg rolls. We're going to put some corn in these (frozen corn 3 1/4 cup), an egg, corn starch that we're going to mix with water and make a slurry to thicken up the mixture. We have a Serrano pepper to give it some heat, it has some great spice in there, water chestnuts, shallot, cilantro then we're going to fry it with oil. We have have our wrappers, water to dip the wrappers to make it more pliable and last thing we have is some peanut sauce. This is a spicy tye peanut sauce that you can find in the grocery store that is what we're going to use to serve the rolls with. "
