"On behalf of Expert Village my name is Lizbeth Muller and today we are going to make congri. I'm mixing my sofrito all together and see this green sofrito I'm mixing all this together and I'm going to wait till it gets high on heat so it can start getting really dark. I want my sofrito to cook for a little bit so it picks up all the flavors. So I'm going to cook that up for a little bit and I'm going to add the juices (oils) from the pork and the bacon. I'm going to take it like this and two spoons of each you don't want to make it too greasy, stirring it up."
