"On behalf of Expert Village my name is Lizbeth Muller and today we are going to make congri. It is important that you use the correct beans for black beans rice. Black bean rice needs beans that are opigue, not shiny and it will cook better that way, you want them to cook for a little bit. So you want the kind of beans that are going to swell up and open, these beans here have been boiling for a little bit. What happens is that if you let it stay and boil for a little bit it is going to make the water dark to make the rice black. Cause that is what you want, you want dark water like this to make really good black rice. Some people when they use the black beans and they do the black rice it looks a little brown, mine is going to look a little bit darker than that today. "
