We're going to need, of course, the fat from this bacon. And you want all types. It doesn't matter what type of bacon you get, just as long as it's plain bacon. You cut it up. OK? So let's talk about also needing tomato sauce. We're going to need tomato sauce for this ingredient. Just very little of it. You don't want a lot. Just a dab of tomato sauce for the Sofrito. The Sofrito is going to be a red-based Sofrito that's going to be added to this black rice."
