"Hi, this is Matt on behalf of Expert Village and today, I'm going to show you how to make Cajun shrimp. Okay, so we're going to make our roux now, and this is what the shrimp is going to cook in. So we're going to add our oil, like so, and then we're going to add our flour to the oil. And on a medium-low heat, we're going to just stir that around until it gets a little thick. And just keep stirring it until you get the clumps of flour out. Just keep stirring it until you get the lumps out. And that's coming along, and it's starting to smooth out there, if you can see that. Here you go. That's perfect. Just a couple more lumps. Okay. Okay, and now we're ready for our next step."
