"On behalf of Expert Village I'm Laura Banford. I'm going to teach you how to make Peking Chicken Wontons. Now we're going to poach our chicken for our Peking chicken cups. Poaching is a very reliable method it involves water and aromatics and of course whatever you are poaching and in this case it's chicken. So I take a shallow skillet and I'm going to put my chicken breast in there and I'm going to add some salted water. You don't want to cover what you are poaching you want the tops of the chicken breast to peek out. You are not boiling them, you are just poaching them so you don't want them submerged in water. I'm adding my aromatics some celery sticks, these little pearl onions any kind of onions will do, I'm going to throw in some carrots too for sweetness. That will add some flavor and what's going to happen now is we'll bring this just to boil and then turn it down to a simmer so that the bubbles are just barley breaking the top of the water and we'll continue simmering the chicken breast for about 15 minutes and then cool them. Later on we will shred them for our Peking chicken cups. In the next clip we're going to talk about wontons wrappers."
