"On behalf of Expert Village. I'm Laura Banford. I'm going to tell you the tale of two quiches. Now we are going to prepare our onions. I'm going to slice them and caramelize them, I have a nice red onion here. I'm going to put it on my board. Cut each end off. I like to score the edge so it peels very easy and we are just going to make a fine dice for this onion. So I'm going to slice it down, then we want to dice it. You don't want big pieces of onion in a quiche. We are going to put this into our pan. I have a nice high quality butter heating, add the onion and actually what I'm going to do is make enough onion for the quiche Lorraine and for the asparagus quiche, so I'm going to use half in each. Onion works well in either of them, add some salt and pepper we are going to let that caramelize get some color for about ten minutes. When we come back we are going to freshly grate our cheese."
