"On behalf of Expert Village I'm Laura Banford. I'm going to tell you the tale of two quiches. Now we are going to cook our bacon. I have some nice thick meaty pieces of thick cuts of bacon, I cut the strips in half so it will be easier to handle and throw in the pan. I've heated my pan here. If I want the bacon to stay flat, I start with a cold pan but in this case I'm going to dice up the bacon or crumble the bacon so it really doesn't matter. I don't need it to stay flat, I'm going to lay it all in there and let it cook. It's going to take a couple of minutes on each side and when we come back we are going to caramelize our onions, see you then."
