"Hi, my name is Gail Hoffman from North Florida and on behalf of Expert Village, I'm going to show you how to make mole poblano sauce. One of the first things that we need to do for our mole poblano sauce is to rehydrate our dry peppers. So I have some boiling water over here and I'm going to submerge my peppers. Here I have the poblano chilies and I'm going to put in the hot water. You don't want to completely saturate them, you just want to submerge them. The reason that we do this is because the dry chilies are dried mainly to preserve them so they don't spoil. So but you can not really use them when they are in dry form so you rehydrate them in the water. So I"m going to let them sit in this hot water for roughly a hour to let them bring some life back into them."
