Today we're going to make Coquille St. Jacquez. Now we preheated the pan a little bit, what we want to do is use a couple of tablespoons of butter, add that to the pan. I like to preheat the pan just a little bit it doesn't have to be like smoking hot. It's nice to preheat it a little cause you can see the butter is already started and even before it's completely melted you can go ahead and add your tablespoon of onions (2 tablespoons). You want to saute these until they are translucent which will probably take about three minutes something like that. Remember butter has a smoking point itself after we get this nice and hot you don't want to have brown butter for this you want to go ahead and have translucent white onions. So once we get this going like, this I would recommend turning it down to about medium high and just keep moving them around the pan.
