"Hi, this is Richard Buccola here in New York City and today on behalf of Expert Village I'm going to show you how to make stuffed shells. We are going to add what we need for our filling and first we are going to start off with 2 eggs. We are going to add 2 eggs to our cheese mozzarella cheese and then we are going to get our ricotta cheese. This is our cheesy meal here. Let me tell you a lot of cheese in this stuffed shell. We are going to need 4 cups of ricotta cheese, 4 cups of ricotta cheese this was actually 4 cups or 2 pounds. What you are going to do is just start to lightly mix all of this together. I'm just pretty much with my spatula is just grabbing from the bottom and folding it over, just trying to mix all of these eggs and cheeses all together. I'm then going to add about a cup of 3/4 of a cup of fresh Parmesan. I eyeball it but you can use your whatcha you ma call it, your measuring cup. I had it right there but I'm just going to eyeball it, I have made this so many times that is about a cup I say, 3/4 of a cup. Again, just grabbing your cheese mixture from the bottom and folding over. Just folding it all in. We are going to come back and we are going to add some parsley to do this, some salt and pepper for taste a a little bit of nutmeg and add our spices. When we come back building our stuffed shells here on Expert Village."
