"Hi. My name is Brandon Sarkis on behalf of Expert Village. Today I'm going to show you one of my favorite alcoholic drinks to drink when it's cold outside - mulled wine. In a minute now, this is what I'm going to do. I'm going to take those spices I just toasted using my high temperature spatula here, and I'm going to put them right in that mixture. I've, you've been using rubber spatulas you can make sure you get it all out of your pan, really maximize your usage. You want to make sure that they get all nicely mixed through here. The next step is we are going to take our sugar here, and dump in our sugar as well. So what we're going to do now, with our sugar in there, we're going to boil this until our sugar totally melts in there. You'll see what happens with that here in a second. So we'll come back to that when it's all done. Okay, so now you can see I’ve reached a boil with the sugar in there and it's changed color completely. It's now a clear color. The thing you want to watch out here is you want to watch out with your sugar you want to make sure you scrape down the insides of the pan really well. So what will happen is... see how it's starting to kind of cake up right there. That can cause you some problems later and if you know sugar you'll know what I'm talking about. So you just want to make sure that you don't get any foreign objects in here. Don't get any water or anything in here because it will screw it up. So while this simmers, I'm going to take two of my three cinnamon sticks - the other one is for a garnish - I'm just going to drop these both in here. What I'm looking for here is I'm looking for this to reduce down until it's a thick syrup before I add the other wine into it. So I'm pretty close I think. But let's go ahead and take a few minutes. I'm going to turn the heat down to about six and I'm going to step aside and slice up my orange and my lemon. We'll come back and go from there."
