Saute Onions for Twice Baked Potatoes Recipe

"Hi! This is Richard Buccola of New York City and on behalf of Expert Village. Today I'm going to show you some twice baked potatoes. Alright so we're back. We got our onion chopped real fine. You don't want to put this onion right into the mixture yet. You don't want to do that because it will be too overwhelming. You want it to be cooked a little bit. We're going to come over to our frying pan over here. We're going to come over here and get a nice hot flame. You want to put about a tablespoon of oil in my pan and get it real hot. Get that real hot. What you're going to do is just add your onions to get them translucent. I got a nice hot flame on there. This is great. The flavors of the onion will come out. We'll put it right into our potato mixture. What we're going to do is just add this right now nice and easy and let that start to cook up. I'll tell you twice baked potatoes, they're a little bit more trouble than just cooking a baked potatoes, but it's really nice and it really tastes good. My uncle Lenny loves them. We're going to get uncle Lenny. I've actually tried to get him to be an expert because he's on the greatest cook in the world, but if we can get him on he can fix anything. We call him uncle MacGyver actually. I don't know why I even brought him up, but he does love the shrimp cocktail that I made here. He also loves twice baked potatoes. While those are starting to open up, you just want to get those translucent. When we come back I'll start putting this all together.
