"Hi! This is Richard Buccola of New York City and on behalf of Expert Village. Today I'm going to show you some twice baked potatoes. Alright, so we're going to go with this onion and just chop it up. I'm going to cut one side of the onion and then cut off the other side. Just give it a slice down the side of that and we'll peel off the skin. This is a nice dish I'll tell you because kids love it. Kids will eat this up every given time. I cannot tell you how much they love twice baked potatoes. You know what makes them so good? It's like you're making a mashed potato inside a baked potato. That's it in a nutshell. You're going to get your onion here peeled. Remember to cut it or chop it fast just cut it in half. You'll see the lines of the onion here. What you want to do is go with the lines. Don't forget to keep your fingers in like so, so you don't cut them. Keep in knuckles. Pull them to the side. Onions are great. They taste great for this dish. We're going to go completely down. Turn your onion this way and you'll see how nice it chops. If your pieces are too big don't worry about it. I always you don't have to get so fancy when you chopping. Keep your big pieces in the middle. Keep your point and just bringing the back up and down to chop fine little pieces. I'm looking at the amount I have. I'm going to say just from eye balling because I like to eye everything, that half an onion is going to be more than sufficient for this meal. When I get back, I'm going to finish chopping this up, and show you how fine it looks. This we can save for soup or for something along the way. We'll just put it in a saran wrap. Come back and we'll get this chopped, put it in, and start mixing it all up. We're making twice baked potatoes here on Expert Village."
