"Hi! This is Richard Buccola of New York City and on behalf of Expert Village. Today I'm going to show you some twice baked potatoes. Alright, so the first thing you're going to do is let your potatoes warm. I can touch them. You want to be able to work with them. Let them stay on your counter top for about 10 minutes. What you're going to do is take your knife and just a 1/4 of the way down you're going to slice and come straight through the potato. We're going to take that out like so. Be careful because it could still be hot. This whole middle piece. You just want to hollow this all out with your spoon and put that in our bowl. You see how nice that comes out. You can even hollow it a little bit more if you want to. Just go delicate. You don't want to break the skin. You want to keep it intact. Again, you're going to do the same thing with this side getting all of that potato in the bowl. When I come back, I'm going to do the rest of these and I'm going to start showing you how I spice this up. Twice baked potato here on Expert Village.
