"On behalf of Expert Village, I'm Laura Banford. I'm going to show you how to make white bean escarole soup. The main part about this soup is navy beans. These are white navy beans, are not navy they are white and they are dried form, beans are like grow in a pod a long pod that I'm sure you've seen. They are individual beans in a pod the pod is taken off and the beans are processed and dried. Dried beans are really inexpensive what makes them a great staple. They are also full of iron and fiber that is great for vegetarians; this is obviously not a totally a vegetarian soup. But it's good for vegetarians cause it has a lot of protein and fiber and all that nutrients so beans make a large part of your a lot of vegetarians or vegans diets. I mentioned before if you soak the beans over night for about 10-12 hours, they will be ready to use. These are soft and they are ready to go in a soup you couldn't throw the dry beans in a soup because they would be hard for a long time. You can boil them alternatively you can boil the beans vigorously for about an 1 1/2 if you don't have overnight, if you don't have that kind of time. I soak those overnight in salted water and now they are great and ready to go. In the next clip, we will prep our onions and our garlic and get the soup going."
