"Okay, so I got my onions, I got my jalapeño and I got my tomatoes in a pan and the last thing and a very important thing that I'm going to add as far as ingredients go. Are garlic cloves and we're going to use fresh garlic cloves and it may look like we have a lot going on right here but in reality when garlic cooks it becomes really sweet. You lose a lot of the strong bitter flavor that garlic has so, don't hesitate to put extra garlic or more than what you think you're going to need. Because as it cooks it's going to caramelize, the sugars are going to come out and it's going to make a really sweet flavor. Again because we're putting bigger pieces I'm just going to do a rough chop don't worry about making it perfect cause this is going to go in a blender. Once it's all nice and roasted, and that looks pretty good just like that. So I'm going ahead and sprinkle that over my ingredients here the other great thing about the garlic is that it's going to flavor oil that we add to it. So it's going to make it a really nice garlicky oil, and that is what it looks like once you add your garlic."
