"Hi, this is Rich Buccola, here in New York City, and today, on behalf of Expert Village, I'm going to show you how to make Split Pea Soup. We're going to cut our ham steak up into some bite-sized pieces. You want about two cups, but you know what, this is a nice steak, so if it's extra it doesn't hurt. Everybody loves to taste that ham when you're eating the soup, I know I do. Cut a square, cut if off. Don't worry about the fat. If you want to cut the fat off, you can. I leave it; it makes for great flavor. Just little bite-sized pieces, like so. You're just going to turn it here, and cut that one again. Just turn it, and you're going to cut over about an inch, and you're just going to make nice little pieces, like so. Remember to save the bone in the middle. We will also throw the bone in the soup to give it that flavor that we're looking for. I love the bone marrow, that's what gives it that flavor; that's good stuff. If you can get a pork bone from your butcher, by all means do so. That will make it that much better."
