"Hi! This is Rich Buccola here in New York City and today on behalf of Expert Village, I'm going to show you how to make French onion soup. We're back. We're going to cut up our onions. For that big pot that we showed you earlier, you're going to need to fill it up pretty much. You're going to need a lot of onions. Get yourself a big bag of onions and just start cutting them. What you want to do is just get that skin off, that top layer, and we're going to slice these very thin. We'll get our skin out of our onion. Make sure there's no pieces like so. Get all your skin off. You have your nice onion. What you want to do is get nice thin slices. Taking your knife just go straight up and down and start cutting. Don't worry if they're not perfect sizes. It doesn't matter. I'm going to slice our onion very thin. You're slicing nice thin slices. Like I say, when you get to that halfway point, you can turn this way sometimes. It's easy to cut from this side. Just make nice even thin slices. They need a lot of onions for this one. Don't worry, they cook down as they caramelize. Believe me, there's nothing better than a beautiful caramelized onion. Keep cutting your onion. Nice."
